Ingredients:
2 dragon fruits
2 Tbsps. Sugar (use coconut sugar/muscovado for a healthier sorbet)
3/4 cup light coconut milk
2 -4 pieces of limes/lemon (juice it before combining)
1 1/2 cups crushed ice
Instructions:
1.Divide the dragon into two halved and scrape out the pulp. Set aside the rind and use it as a bowl later.
2.Combine the sugar and coconut milk into a bowl until the sugar dissolves completely.
3.Put the pulp of the dragon fruit, sugar and coconut milk combination, lime/lemon juice and crushed ice into a blender. Blend until smooth.
Note: Add more coconut milk to make it creamier and resembles an ice cream texture. But if you want it to end as a sorbet, then reduce coconut milk. Taste it and add sugar if it tastes a little bland.
Now enjoy your tasty, sweet-fruity sorbet by placing a few scoops into your dragon fruit bowls.
