(approximately 30 cookies)

Ingredients

1 cup unsalted butter at room temperature

1 cup refined sugar

3/4 cup light brown sugar

1 cup chunky peanut butter

3 cups all-purpose flour

1 1/2 teaspoons vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1/3 cup granulated sugar (this will be used for coating)

Procedure:

1.Preheat your oven to 350º F
2.Cream the butter and sugar in a large bowl. Use a stand mixer for this step. Cream the two ingredients until smooth or until you arrive at a desired consistency.
3.Add the peanut butter and vanilla. Mix them thoroughly.
4.In a separate large bowl, prepare dry ingredients. Sift the flour, baking powder and baking soda.
5.Pour the wet ingredients slowly into the dry ingredients. The dough is ready for baking if it’s sticky and a little bit thick.
6.Store the dough by covering it in your fridge for 2 to 4 hours.
7.After 2 to 4 hours, the dough is ready for baking. Form the dough into a cookie shape and coat them with sugar.
8.Then put them on a tray with a parchment paper on it.
9.To make your cookies more appealing,  press the points of a fork into the cookies to form a lattice shape on top.
10.Bake the cookies for about 10 minutes or until they turn brown.

Take note of this important step; allow the cookies to cool before taking them out on the baking tray. If you force them while they are still very hot, they will break and you will lose their shape.
