Portable Pancake Pockets

Not that often you come across an idea as good and delicious as this. You can make healthy pancakes, fill them with fruit, and save them for eating throughout the day.

These are “inside-out” pancakes filled with strawberries and blueberries.

Steps:

Make the batter (standard pancake recipe).

Chop up the strawberries and blueberries finely. (You can use a food processor). Don’t turn them into juice though.

Get a skillet and pour 1 tbsp onto it heated and greased. Spread it to desired thickness. Consider whether you want puffy ends.

Scoop some berries into the center and spread them out.

Drizzle batter onto the berries to cover them.

Flip the pancake and complete the cooking.
